How to make Outback Steakhouse Bread …

April 24, 2008 Jasmine

That is NOT my picture. I couldn’t find one of the bread online. Okay so I have not tried this recipe. I am posting this for a friend who asked if I have this recipe or something similiar. I found this on a board I frequent called Prairie Homemaker. The poster who posted this is riverwalk. Here is a link to the thread but you need to be registered I believe to view anything. I have no clue if this is authentic, or similiar or who’s recipe this is. I will have to try it once I get ahold of some rye flour. I love the outback bread as well! If anyone reads this and trys it let me know!

Outback Bread (Honey Wheat Bushman Bread)
3 packets dry yeast
1 1/2 cup warm water – divided
1 Tbls. sugar
1/2 cup dark molasses
1 Tbls. salt
2 Tbls. vegetable oil
2 cups rye flour
2 1/2 – 3 cups all-purpose flour
Dissolve yeast in 1/2 cup w arm water; stir in sugar; let stand 6 minutes or until bubbly.
-Combine dissolved yeast, 1 cup warm water, molasses, salt, oil, and rye flour in a large
bow l; beat until smooth.
-Work in all-purpose flour until dough is smooth, pliable, and elastic, not sticky.
-Knead dough for 4 minutes.
-Place dough in a large bow l, cover with a damp cloth, and let rise in a warm place until
doubled in size.
-Punch dough down.
-Divide and shape dough into 2 large round loaves and place on greased and cornmeal dusted
cookie sheet.
-Cover dough with a damp cloth and allow to rise in a warm place until doubled in size.
-Bake loaves in a 375 degree oven for 30 minutes, or until crust makes hollow sound
when tapped on.
Serve with whipped butter. Bread can be frozen for later use.

A lady named heartforhome also posted a recipe for this to be used with a bread machine.

Here’s a bit different version for the bread machine:

OUTBACK STYLE BREAD
1 1/4 cup warm water
2 tablespoons butter
1/2 cup honey
1 cup bread flour
1 cup whole wheat flour
1 cup rye flour
2 tablespoons cocoa
3 tablespoons brown sugar
1 teaspoon salt
1 1/2 teaspoons yeast
1 tablespoon gluten

Add ingredients in the order listed by your bread machine manufacturer.
Use whole wheat cycle. Makes a 1 1/2 pound loaf. Ends up lighter than the Outback‘s bread but very close and very good!

That sounds amazingly yummy. I may have to try it…but I really don’t like rye, but maybe this’ll be fine.

I don’t like rye either and was a bit shocked to see it as part of the ingredients list. I LOVE the outback bread though. It is very dark. I will have to try this. 🙂
