Chasing the Sun

That is what Joey calls it. The sun seemed as if it had been setting forever as we drove closer and closer to the coast. Remember in my last post how I said I couldn’t wait to go back to Laguna Beach? Well I didn’t have to wait long. haha

Laguna Beach

is about 100 miles from here, one way and is breathtakingly beautiful. This was the second time we had been out that way. The first time was a few days before our wedding. Friends of ours live out there and recently got married on the sand at sunset. It was a small gathering and afterward we all walked over to the Hotel Laguna for the reception.

Well I walked, Joey drove the car over from the metered parking to the valet parking. That was the only parking they had. By the way, when we got home that evening a few items were missing from his back pack.

The Birthday Girl




So our youngest dd is 4 this month! Normally in the past we tried to keep birthday and x~mas presents at $50.00 each. This year money has opened up a bit more so I told the kids $100.00 each and that is it! That adds up quickly when you have 5 kids. Well her birthday falls in December so basically $200.00

Well back in late October or so Joey seen a Barbie Big Wheels car for her at Costco, $189.99. I checked the other stores and seen them for like $235.00-$250.00! I told him to get it as soon as he got off work! Good thing we did. A few days later there were no more and have not been in that store since!

But how to split that up between birthday and Christmas? lol We found a kitchen playset at Walmart for surprisingly only $38.00! We also wanted to get her some stuffed animals. SO we got her a bear rug for $15.00 and a pack of 7 bears for like $10.00 from Costco.

Well we celebrated last Saturday. Home made cake, 2 different kinds of ice cream, hot dogs, nachos and lots of nachos with nacho cheese sauce! Yeah I am glad all the food is gone. lol Here are some pics of her in her new ride. Oh and yes those are garage couches.

Yeah I know, now we are spending like $255.00! She wants a baby doll too. *sigh* Maybe she needs to write a letter to Santa cause I don’t want to go broke! lol What are you getting your kids for christmas?

Chuck E Cheese’s






Okay so we wound up getting roped into going twice last month! We hadn’t been in like a year or so. Our middle daughter was at a sleep over at a friends house and we took all the other kids. I told Joe she would be mad but he didn’t listen. So two weeks later we got to go again. haha Otherwise we wouldn’t hear the end of it! There is the youngest on the horse and with barney and on the jeep. Her older brother is trying to ride with her on the horse. That one is kind of blurry.

A lake near us









All the houses up there are so beautiful.

So my best friend called me up last month and wanted us to meet her at a cabin she rented. It was up in Big Bear lake. So we went up there. It is gorgeous. There was about 15 miles of twisty’s and steep inclines getting up there that I didn’t care for but…WOW It was amazing!

The Fun Park!










Okay so on one of Joe’s days off work last week we decided to take 4 of the kids to Scandia. The eldest didn’t want to go. There was mini golfing, bumper boats rides, race car driving, video games and best of all was the sky scraper!!! The middle two had so much fun on that! I am surprised they didn’t get sick. lol

Old Widow Walker’s Ziploc Omelettes




Omelettes in a bag!

Mrs. Walker was my Sunday school teacher and we used to do this in the church kitchen, occasionally. This is my first memory of cooking that I cherish to this day. She keeps her age a closely guarded secret but is rumoured to be 115+ years old and perhaps, immortal. She has out lived three husbands and four children. She is still sharp as the Bowie knife she carries in her purse. I don’t know why she carries a Bowie knife in her purse- but she always has. I asked her about it years ago and she said, “You would be surprised how often it comes in handy, Honey.” I suppose it does, Mrs. Walker. God bless you. BTW- she is thrilled that I want to pass this on to another generation of schoolchildren. She was surprised that I remembered doing this with her over 35 years ago and was touched. When asked how to do it- she rattled off the instructions faster than I could write! Edited: Mrs. Walker died peacefully in her sleep 3-31-06 of natural causes a few days before her 106th birthday. She is mourned by our community because she had a hand in raising and teaching generations of our families. Thank you Mrs. Walker. You are loved, missed, and remembered.

Omelet in a Bag

33 min 20 min prep
Change to: omelettes US Metric
10 eggs
2 cups cheese, grated
1 cup ham, chopped
1 cup bacon, crumbled
onions
green peppers
1 cup tomatoes, chopped
1 cup hash browns (purchased and thawed)

* Eggs Breakfast

1. Have children write their name on a quart-size ziploc freezer bag with permanent marker.
2. Crack 2 eggs (large or extra-large) into the bag (not more than 2) shake to combine them.
3. Put out a variety of ingredients such as: cheeses, ham, bacon, onion, green pepper, tomato, hash browns, etc.
4. Each child adds prepared ingredients of choice to their bag and shake. Make sure to get the air out of the bag and zip it up.
5. Place the bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelettes in a large pot. For more, make another pot of boiling water.
6. Open the bags and the omelette will roll out easily.
7. Be prepared for children to squeal with delight at their first meal they have cooked. A lifetime memory has just been served.
8. Note: I had to fill in SOMETHING regarding cooking time, serving sizes, and amounts. This of course, depends on your situation and how carnivorous the kiddies are. I’ve tried to guestimate for five servings.

SOme one elses recipe~~ okay so we did these with the kids one morning and they were all excited to “make their own”. They tasted good although for ME I love it when dh makes them regular in the pan but it was a big hit with the kids. Karolina said she wants to make them EVERY day!

The Lake….(last month)


….Well this is the second weekend that we have gone up there. It is only about a one hour drive there so not too bad. Next month is Joey’s vacation so we are going for at least 4-5 days. I can’t wait! It is so beautiful there!! So peaceful even when you have kids hanging on ya. The most annoying thing is the bees trying to eat lunch with you! haha I can’t wait to go back. Though this last time really did a number on my heel. I have been having trouble on and off, just a little bit of pain really for like a month now. But boy did it sure act up saturday! I was fine all day but when I woke up sunday morning I had to hobble to the bathroom it hurt so bad! I spent part of the day in bed and Joey wrapped it in a hot towel and I just tried to stay off it. He chased the lkids around and took care of dinner so that was great! I am feeling much better today and am going to go for my walk today Probably around 4:00
