The best muffins ever!

Okay so I have to come on here today and admit I goofed! I tried Dorie Greenspan’s Chocolate-chocolate chunk muffins

Thursday and it was okay, pretty good. But I felt like it was missing something. It almost tasted a little bit plain. But I knew when I went to make the dry mix up I goofed a tiny bit. The recipe calls for:

1 tablespoon baking powder
1/2 teaspoon baking soda

I was doubling the recipe so I doubled that. The problem is I wasn’t thinking and did 2 tbs baking powder AND soda. I realized it right after I did it and tried to scoop it out but you know how that can be.

How to make Chocolate-chocolate chunk muffins

Mmmm….I am baking these right now. I looked all over the net trying to see if I could find a really good chocolate chip muffin recipe and didn’t really see anything. SO My eldest dd and I started flipping though some of my cookbooks and came across Dorie Green span’s chocolate chip muffins. mmmm… I really like the way the batter looked.

Monster Muffins & Swapmeet Cookbooks

Well since I decided to build up my cook book collection I decided a good place to hit would be the swap meet. I found 3 more of the dessert cups I had bought 8 of before at the dollar store. You know the ones I put chocolate pudding in? He wanted .50 cents each but I got them 3/$1.00. I also found 3 cook books. $2.00 each and I paid 3/$5.00

One is Cooking Light, 1st printing in 1997. Then I got Jenny Craig’s No Diet Required, 1st printing in 1997. Those two looked pretty good and had the cal counts which is what I like. I like trying new recipes but sometimes I get annoyed wondering how many cals are in everything and don’t want to sit there and figure it all out too.

Magnolia Bakery Blueberry Muffins

Well I found online about 7 of the Magnolia Bakery recipes. That is the bakery in New York City where people line up down the block for an hour or longer sometimes just to buy a cupcake. lol Joe was baking with me yesterday and we also tried the vanilla, vanilla cupcakes. I will review those later. These muffins are very good. I used half whole wheat/half all purpose flour. Usually any muffins I do, if I do all whole wheat they come out pretty wheaty tasting.

How to make Chocolaty Chip Whole Wheat Muffins

Okay so I merged two recipes to get a new one. I have a recipe I normally use from my make a mix master mix recipe book that is pretty good but with all whole wheat it comes out pretty wheaty tasting.(To see these pictures better, click on them. The x~mas background is interfering.) Not exactly a bad thing but I kind of want to WOW family and friends around the holidays, not turn them off to whole wheat breads. So I figured I could do half and half. I really wanted a chocolate looking muffin though, not just chocolate chips tossed in. I did go to Walmart and buy two Texas Size muffin pans. I wanted some mini loaf pans as well but did not see any. I should of picked up some mini cupcake pans while I was there so people can sample more goodies. I just may still do that.
